Massaged Kale Salad


1 large bunch curly kale

1⁄2 lemon (juiced)

2 tablespoons olive oil

1⁄8 teaspoon salt pepper (to taste)

Optional: add any veggies, seeds, nuts, fruits, or cheese you like!


Tear spines from kale leaves, rinse and spin. Tear or cut into bite-sized pieces. Sprinkle with lemon, oil, and salt. Massage (lightly knead) until slightly softened. Add more lemon juice, oil, salt and/or pepper before serving as needed.  Also consider a variety of additions which you can toss in right before serving or serve on the side (e.g. grapefruit, avocado, vegan cheesy breadcrumbs).
